Easter Cuisine the seed is shaped like a small pumpkin. Cardamom is the
dried, unripened fruit of the plant Elettaria Within the fruit pods are
tiny, brown aromatic seeds which are slightly spicy. Cardamom is
available in the whole pod and as seeds with the outer huall removed. It
is said that Cordomom has atioxidant properties and can increase the
levels of glutathione a natural antioxidant in the body. It appears
that Cordomom exert atioxidant protection through it's ability to
activate the antioxidant enzymes.
Cardamom seeds are widely used
for flavouring purpposes in food and as carminative known as true or
lesser cardamom is the widely cultivated variet and important in the
world trade. It occoupies a high second or third place in the world
trade, being a high priced spice. it belongs to the sweet spices group
and is used predominantly to flavor sweets, baked goods, and coffee,
particularly in the Arab countries
